Wineries

Between Jerez and Sanlúcar there are twenty minutes by car. Same grape, the palomino, same method. And a different wine comes out: fino in Jerez, manzanilla in Sanlúcar. The river makes the difference — the damp that keeps the living layer of yeast, the flor, afloat on the wine all year round. The Condado de Huelva, across the marsh from Sanlúcar, ages under that same flor and bottles a rarity almost no foreign visitor has tried: orange wine. Cross the Guadiana and the flor disappears: in the Algarve there are no thirty-year soleras, just young wine from grapes almost no one outside Portugal has tried. And further up the same coast, at the mouth of the Douro, the wine turns fortified again: the port houses of Vila Nova de Gaia, across the river from Oporto. Eight houses are open today — choose one below.

Twenty minutes, and a different wine. If there's one thing to take from all this, let it be this: Jerez and Sanlúcar are twenty minutes apart, use the same grape and the same method, and the wine comes out different. It isn't the soil: it's the river — the moisture that keeps a living layer of yeast afloat in Sanlúcar that thins out in Jerez by summer. You have to taste them the same day, one after the other, to believe it.
